Curry Pumpkin Chickpea Soup
I had some leftover pumpkin from those pumpkin cupcakes, and I knew exactly what to make with it… something with curry! This soup was amazingly good and, even better, astoundingly fast.

What a yummy dinner! Inspired by the Eat.Sweat.Blog challenge at socialworkout.com, I busted out the quinoa for tonight’s dinner. Over a bed of sauteed swiss chard and topped with toasted pine nuts, with a generous side of bean chili, made with veggies from my mama’s garden.

Eggplant Moussaka
This recipe was pretty darn good. Eggplant, zucchini, potatoes, plus a tomato-ey layer and a ‘cheesy’ layer… Mmm.
