Guess what mysteriously appeared at the farmers’ market last Saturday? Okra! In Illinois! In the fall! What? I don’t get it, but I’m not gonna resist it. I bought a bag and proceed to make, tonight, my very first batch of okra fries.

What a yummy dinner! Inspired by the Eat.Sweat.Blog challenge at socialworkout.com, I busted out the quinoa for tonight’s dinner. Over a bed of sauteed swiss chard and topped with toasted pine nuts, with a generous side of bean chili, made with veggies from my mama’s garden. 

Seriously, such a fantastic meal to end the day… 


This recipe was pretty darn good. Eggplant, zucchini, potatoes, plus a tomato-ey layer and a ‘cheesy’ layer… Mmm. A few hours later, my family is still raving, which is saying a lot, since they normally resist vegan entrees. I’m usually relegated to the side dish. Well, not any more. Thank you, Veganomicon.
