Vegan Mounds

23Dec09

This year I was inspired to make homemade chocolates to give as gifts — inspired by a handful of bloggers featuring just such homemade treats, but inspired the most by Hell Yeah It’s Vegan!’s Chocolate Coconut Cups. Click over and check out those yummy looking pictures!
I started by improvising a double boiler. I brought about [...]

It wasn’t too long ago that I fell in love with the recipe for Mexican Hot Chocolate Snickerdoodles from Vegan Cookies Invade Your Cookie Jar. When I first had a go at these cookies, I halved the recipe, thinking I’d never need that many cookies — and they were gone within an hour! This time [...]

As promised, I have plenty of pictures of the baking extravaganza I was so lucky to share with my good friend Fionnuala of Basil Exposition. Fionnuala is an old hand with a pastry crust and has really inspired me to bake more. Cupcakes are one thing, but these mince pies and scones felt like real [...]

Cornucopia

14Dec09

Still one of my favorite restaurants in the world, Cornucopia was my go-to choice for eating out when I lived in Dublin. It’s amazingly cheap compared to other restaurants in the city, and I’m not exaggerating when I say the food is some of the best I’ve ever tasted. Needless to say, I tried to [...]

Grafton Street full of lights and holiday shoppers…

I love how festive it is. I never thought to document this when I was living here, but now I feel inclined to be a tourist and snap pictures of everything.

More to come soon…

I’ve been down for the count this week because of a nasty upper respiratory infection (thanks, swine flu!), so I haven’t been in the mood to cook (or eat) much. If there is one thing I really hate, it’s losing my appetite. I’ve been living off multi-grain Cheerios and So Delicious ice cream for days, [...]

I always mess up cookies. It’s true. I have a reputation. If I bring cookies to a get together, word usually spreads fast, and heaven help the poor soul who didn’t hear the whispers in time and actually tries to eat one of my fiber-full treats.
That’s the thing: I can’t stop myself from trying to [...]

My friend Emily had some leftover pumpkin in her fridge (fresh, not canned), so we decided to make cookies Saturday. We went with this recipe for pumpkin oatmeal cookies from the ppk.

We made a few changes, which led to these cookies tasting a little more healthy than decadent, but they were still delicious. If you [...]

I’ve been seeing tons of bloggers filling their nearly empty peanut and almond butter jars with oats in order to scrape out the last little bit. It’s pretty much a genius idea.

And I just wanted to confirm that this trick works just as well with smoothies. Especially chocolate banana smoothies.
That is all.

I’ve made lots of cupcakes since yesterday! Using this ppk recipe for Chai Latte Cupcakes and this recipe of Celine’s for pumpkin cupcakes with cream cheese frosting, I made my friend Missy the birthday present of a lifetime. Cupcake variety + plenty of love.

I topped the chai latte cupcakes with plain frosting and a sprinkling [...]
