Cornucopia

14Dec09

Still one of my favorite restaurants in the world, Cornucopia was my go-to choice for eating out when I lived in Dublin. It’s amazingly cheap compared to other restaurants in the city, and I’m not exaggerating when I say the food is some of the best I’ve ever tasted. Needless to say, I tried to [...]

Where have I been eating my lunches for the past month?
Right here, in front of this lovely old Dell.

There was about a teaspoon of hummus left in my Sabra container, so I packed a sandwich in it and used the bread to scoop up every last bit of hummus.
This was kind of a random sandwich. [...]

Why did I have cucumbers soaking in salt water yesterday?

Because I was making gazpacho, of course. After two weeks of pure insanity (a whirlwind weekend in Chicago, Gary leaving [which involved one cancelled and one very delayed flight, plus much sadness], my new job starting, my thesis due, and classes starting), I finally got the [...]

Summer Salads

05Aug09

Mmm this salad was goooooood. Not gonna lie, there was no measuring involved in the dressing component of this, absolutely none. I will recount for you what went in, but just do it to taste and you’ll be fine and dandy!
1 can cannellini beans
1 entire bunch swiss chard, chopped
1 zucchini, in quartered slices, pretty thin [...]

I just gotta share with you, because I made something good…

I was going to make some plain old cheesy cashew spread, but I had a bunch of spinach to use up before it went bad. Enter the best idea I’ve had in awhile.
1/2 cup soaked cashews
3 cups spinach, wilted with a teeny bit of olive [...]

I picked up a huge bunch of radishes at the farmers market on Saturday and knew I wanted to use them for our family’s Memorial Day cookout. My inspiration for this salad came partly from my favorite beet salad and partly from a pretty picture on my lovely friend Molly’s blog. The union of the [...]

I’m home! After a VERY long day of traveling yesterday (and staying awake for 23 hours straight on only three hours’ sleep), I am finally settling into Rockford again. The weather is absolutely gorgeous and everything seems to be just as I left it. Such a happy homecoming….
But back to Spain! I have lots and [...]

Barcelona was AMAZING — exactly what I needed, and everyone said I left Dublin at just the right time because the weather here was pretty crappy the whole week I was gone. I was certainly glad to be in the sunshine!

My beautiful sister at Parc Guell — more on that to come in Barcelona Part [...]

So guess what? Jenna and Gena are holding a Raw Challenge for the month of May. I know. So exciting. The deal is: every Wednesday in May, eat one raw meal and one raw snack. There is already a pretty high incidence of raw food in my diet, but I don’t often go to great [...]

Using Up Food

29Mar09

I finally finished that gosh darned eggplant! I put him on a pita with some tofu and tomatoes (also finished!) and served it up with strawberries and a side of kale (finished too!). Finally, my supplies are diminishing and I can get new and different things to eat. I’m sure other single people have this [...]
