Veggie Party
I had the biggest veggie dinner tonight!
So I had been delaying my next grocery shop in order to use up some of the stuff in my press. This was good, because I used up some of the stuff in my press. It was bad because most of the stuff in my press was really carb-y or was dates. Yeah, I had three bags of dates and have consumed waaaaaay too many dates in the last few days. I finished off my fruit and veggies a day ago and by today was craving veggies. So I went on a shop! I got a ton of stuff and spent another 40 euro — gosh groceries are expensive here! But I got great stuff — lots of tea, peanut butter, tofu, hummus, so much produce, and, yes, more dates. I had to.
Onto tonight’s dinner! Ireland is full of parsnips. Until tonight, I had never had a parsnip. Crazy, but I just didn’t know what they were like, what to do with them, etc. But I was feeling adventurous, so I bought some and cooked them up with carrots. I boiled the veggies for a couple minutes then sauteed them in a mixture of vegan margarine, brown sugar, agave, cinnamon, nutmeg, ground ginger, wheatberries, and raisins. So yum! Turns out parsnips are GREAT! They have a super texture and are really sweet. I found myself picking around the carrots, because compared to the parsnips they were totally boring. Oh, and on the side I had some roasted brussel sprouts and kale chips. Told you I had lots of veggies. And now the world is back in balance.

Lovely – I lurve parsnips soooo much. Which reminds me I have some in my cupboard to use up!!
Ooooo, I love parsnips but they’re not terribly common in my neck of the woods. I’ve mushed them up into mashed potatoes before, yummmm!
I know, I had never even seen them around in Illinois! Now I’ll definitely be seeking them out when I move back…
