Big Salad
I love big salads. Just to give some perspective, this is the second biggest bowl in a mixing bowl set. So good.
Ingredients:
Romaine
Spring Greens MIx
Baby Tomatoes
Toasted Pine Nuts
Black Beans
Kidney Beans
Garbanzo Beans
Tofu in a Teriyaki Rub, pan-fried
Sesame Ginger Dressing

Chickpea Stew
Even the cutest tomatoes have to fulfill their destinies at some point. Chickpea stew is probably where they’d like to end up.
1/2 cup chickpeas
2 baby eggplants
5 smallish tomatoes
5 artichoke hearts
sprinkling of chopped onion

Potato Salad
Oh my gosh. A heck of a lot of work went into this potato salad, but it was SOOOOO worth it.

No-quesa-dillas?
If I haven’t said this before, I love eggplant. And I love the spinach-eggplant-tomato combo. And it’s perfect for a no-cheese quesadilla! I put some chopped up olives in too, and broiled it all. Accompanied by leftover green bean salad… pretty darn good.
