Big Salad

I love big salads. Just to give some perspective, this is the second biggest bowl in a mixing bowl set. So good.
Ingredients:
Romaine
Spring Greens MIx
Baby Tomatoes
Toasted Pine Nuts
Black Beans
Kidney Beans
Garbanzo Beans
Tofu in a Teriyaki Rub, pan-fried
Sesame Ginger Dressing

So good.

Chickpea Stew

Even the cutest tomatoes have to fulfill their destinies at some point. Chickpea stew is probably where they’d like to end up.

1/2 cup chickpeas
2 baby eggplants
5 smallish tomatoes
5 artichoke hearts
sprinkling of chopped onion
2 cloves chopped garlic
bit of dried basil
1 tbsp olive oil
salt to taste

Potato Salad

Oh my gosh. A heck of a lot of work went into this potato salad, but it was SOOOOO worth it.

I boiled some new potatoes and let them cool. Then I cooked some kidney beans and some wheatberries and toasted some hazelnuts. I added all of those, plus diced cucumbers and very very finely chopped [...]


If I haven’t said this before, I love eggplant. And I love the spinach-eggplant-tomato combo. And it’s perfect for a no-cheese quesadilla! I put some chopped up olives in too, and broiled it all. Accompanied by leftover green bean salad… pretty darn good.

Mmm look at that green…
Green beans, sauteed with garlic and then chilled, plus cucumbers (again! I have so many!), little baby tomatoes, sesame ginger dressing, and toasted pine nuts. Yum.
