J has requested that some meals on this blog be made in honor of her. I often think of her when cooking anyhow, as she was the one who taught me that eating peanut butter sandwiches for lunch and dinner every day is a no-no (thanks for that one), and as she taught me how to cut vegetables. I owe so much to this woman.

So, the first meal made in honor of J. This meal reminds me of J because it incorporates several food groups. Vegetables (eggplant and spinach), fruit (tomatoes) and whole grains (there’s brown rice under there). Although I did not use TJ’s Vegetable Medley, this meal is reminiscent of something that J might have made for me when we first became friends.
