The Three C’s of Summer
I’ve eaten a version of the same salad every day for the last four days because –
we have a surplus of gigantic, uber-crisp cucumbers in our garden. Ohmygosh. The best cucumbers I have ever had. So yeah, I’ve been eating cucumber salads. And really loving my life.
CUCUMBERS, spinach, carrots, tofu, chopped peanuts, and sesame ginger dressing. [...]

Look at my new boy!
He is as yet nameless but I would be open to suggestions…..

I never eat pasta. I literally just don’t think of it. Same goes for rice, unless it’s Spanish rice in my Mexican food. I’m just not one of those people who thinks, ‘protein, check. vegetable, check. whole grain, check’. I just make want I want, and usually the only forms in which I crave carbs [...]

Cupcake Hotties!
Taking a cue from Jenna at eatliverun, I skipped the gym and gave yogadownloads a try tonight. I wasn’t expecting such a workout from a twenty minute class, but I was sweating a ton by the end! And the level was challenging enough that I think I can do the same class several more times [...]

Summer dinner (and dessert)
Sorry, I’ve been eating cabbage for the last three days. Cabbage salad, boiled cabbage, cabbage sandwiches. Oh, and I’ve been drinking beer. My butt has been warming a stool at Rockford’s own Carlyle brewery downtown for the past few afternoons. It’s just too dang hot out not to sample all the brews…
Anyhow. Another easy tofu affair [...]

cabbage!
So I got a big head of cabbage yesterday at the farmers’ market, and I spent the afternoon deciding what to do with it. I decided that I didn’t really want to cook it because it’s so hot out, so I made a little salad. Cabbage, carrots, sweet onions, cucumbers, kidney beans, chives from the [...]

Pumpkin Chocolate Chip Cupcakes
These are sort of the pumpkin chocolate chip cupcakes from VCTOTW, but, me being me, I absolutely have to mess with every recipe I use… so these have less oil, more soy milk, and a tablespoon of tofu cream cheese added to the glaze. And they are delicious. Dense dense dense, due to the less oil, [...]

Much Needed Feast
I ended up unexpectedly working a double today, and the restaurant was so busy I didn’t have time to take a break. I didn’t have a snack with me anyway, so I was forced to push through — and I am not the kind of person who likes to miss a meal, or a snack! [...]

Ja’ Grill
A journey into Chicago yesterday included a stop at an awesome Jamaican restaurant on Armitage, Ja’ Grill. Only one of my pictures turned out, but I think you can get the awesomeness of this meal — a carrot, broad bean, and cabbage stew in coconut milk with beans and rice and fried plantains. We got [...]

Coconut Date Rolls
So when I lived near TJ’s (oh for the days!) my fridge was always stocked with their amazing coconut date rolls. So good. But I do not sit and wallow in my misery now that I cannot buy them so often. No, I make them myself!
I threw a bunch of pitted dates, agave nectar, nutmeg, [...]
