More cake

When company comes, cake must be served. J and K came over last night to watch the first three episodes of season one of Big Love. What goes better with that than the remains of the Love Cake and its new brother, whom we will call the Sunshine Cake. I’m going for upbeat themes here.

This cake was a basic banana-chocolate cake with lots of cinnamon and carob chips. I’m not putting up the recipe because (a) I didn’t really use any specific measurements and (b) it’s sort of an amalgamation of a few different ideas. I did make sure there was way more chocolate than banana. I used cocoa and put lots of extra carob chips on top, too. 

Then I whipped up a frosting/icing/creamy topping sort of thing using soft tofu, tofu cream cheese, and lots of sugar. I made most of it yellow, but set aside some of the white for decorative touches. 

I wanted to use the leaf tip on the cool new cake decorating tool I got, but this frosting/icing/topping I came up with, while it tasted amazing, was a little too goopy to make all perfect leaves. I got some good ones, I got some bad. I rolled with it.

And p.s. can we talk about how awesome Big Love is? Seriously.
