cranberry cookie sandwiches
I had all those frosting leftovers from yesterday’s cupcake disaster, so I decided to try some cookies. Since the frosting had cranberries in it, I went for cranberry rather than the old chocolate chip standby. And, yes, these are the strawberry-flavored cranberries.
I’m didn’t measure much, but I know I used roughly 2 parts flower to one part earth balance and 1 part sugar. I also threw in some flaxseed, agave nectar, baking soda, and salt. And the final touch, cranberries. Thinking back, I probably should have used some oats too. Oh well, next time.
The frosting was a tofu-tofu cream cheese-sugar combo with the juice from boiled cranberries for coloring. It needed more coloring, I think, but it was a nice light pink, anyway.
The flat bottom/rounded top quality of these cookies lent itself to cookie sandwiches, so I went with that.
Sunbathing cookie sandwich. What a beauty.
