Last night M and I decided to make the cappuccino cupcakes from Vegan Cupcakes Take Over the World, using the espresso cream cheese frosting as the filling and the icing. After my last cupcake catastrophe, I had a good feeling that these would restore my cupcake confidence, and I was right.

I made this pancake super oaty and hearty with lots of flax, and I had my sweets on the side. Stylish and sassy, eh?
